Blue Hubbard Squash have a tough, blue-gray exterior skin that covers yellow, fine grained, dry flesh with rich flavor. This winter squash can vary great in size, weighing anywhere from five to fifteen pounds. Rather than peeling its skin off, half the Blue Hubbard, remove seeds, and roast cut side down until tender. Good for soups, curries, or casseroles.
